ABOUT THIS COFFEE
A peaberry is a natural mutation of the coffee bean inside its cherry. Normally coffee beans grow two to a fruit, flat against each other like halves of a peanut, but in about 5% of the world's coffee production, a bean is born an only child. And, perhaps similar to an only child, the peaberry beans get kind of spoiled by not having to share nutrients with anybody else. They tend to be smaller, denser, and rounder then a typical coffee bean. The shape of the peaberry requires an altered roasting technique in order to ensure proper development without charring the outside of the small beans. As a result, they taste noticeably sweeter, more acidic, and more complexly flavorful than their flat-sided counterparts as well. Because there's no way to tell from looking at the cherry itself whether or not a peaberry is inside, these little guys need to be hand-sorted after picking and processing in order to be sold separately.
